Best "Mock" Mashed Cauliflower

        Happy Mother's Day! (I have the exact Essie Mint color you posted on my toes right now btw:) For Mother's Day we are cooking at my mom's house and I'm in charge of the Cauliflower "mock" mashers.. I made them last weekend with Elena and they are so good! They really do taste like mashed potatoes and they are dairy free! (Although you can add cheese and/or butter if you want:).            
       Cauliflower is a low-calorie veggie that has phytochemicals that are thought to help prevent against breast, colon, prostate, cervical, and ovarian cancers. It is also a good source of Vitamin C and several of the B-vitamins. You really need to try these stat..plus there are so many different ways you can make them depending on what you add (fresh herbs, goat cheese, green onions, minced garlic, etc etc). Here's the recipe... the way I make mine:

Best Mock Mashed Cauliflower

Ingredients (Serves 4):

1 head of cauliflower, trimmed and cut into small florets
1-2 tablespoons of extra virgin olive oil (can adjust to your liking)
garlic powder (optional, if you like garlic)
sea salt and black pepper
chili flakes (optional, if you like spicy)
chicken broth (can adjust to your liking)

Directions:
Steam cauliflower in steamer basket (or whatever steaming method you prefer) for about 10 minutes +/- (or until it feels tender with a fork). Drain cauliflower and then place in blender (may have to do a couple of batches depending on your blender size).. add a little olive oil and chicken broth, garlic powder, crushed red pepper flakes, salt, and pepper and blend to your liking.. you may want to add more olive oil or broth.. just make sure to taste as you go bc a lil garlic powder can go a long way. I added Earth Balance  Vegan Buttery spread to the mix when I was done blending so it wasn't as thin a consistency. That's it! ..

... Even my step-dad just tasted them and said "that's healthy?" bc they taste so good:) enjoy!
