Clean Eating Banana Oat Pancakes for One:

     Although I am not a fish person, I must say that dinner looks really good. I will have to try that salad for sure and of course I love the Melissa cupcakes.. especially bc they are mini:) That's awesome you can order them online too... I had no idea!

    Speaking of sweets, some mornings I crave pancakes so badly but dread the guilt of empty carbs and added sugar, so... Through trial and error, I developed a healthy version that satisfies my cravings.. plus they are full of fiber, protein, and healthy fat therefore making it a complete meal!

Banana Oat Pancakes for One (can double or triple, etc. depending on how many you making for):

Ingredients:
1/3 Cup rolled Oats (I use the Bob's Red Mill gluten free oats)
1/4 Cup light cottage cheese (I use the Lactaid kind b/c easier to digest)
2/3 Cup liquid egg whites
1/2 Banana
1/2 Tablespoon of ground flax seed meal
1/2 teaspoon baking powder
1 teaspoon pure vanilla extract
dash of cinnamon (optional)
1 packet of stevia (optional-depending on if you like really sweet but I don't use it)
pinch of salt (optional)

Directions: 
Mix all ingredients together with a Magic Bullet or any blender. Meanwhile spray pan with cooking spray and allow to heat a couple of minutes on medium before starting. Turn down to medium-low once it's warm, then pour batter into small pancakes (should make about 12 4" cakes)- the smaller the better b/c this way they don't burn.  Wait until you see some bubbles in the batter then flip them.. doesn't take very long to cook, but be careful the heat isn't too high.  Can top with pure maple syrup, peanut butter, agave nectar, etc etc.. I like to just use Earth Balance Vegan Whipped Buttery Spread and a sprinkle of salt:) So easy, healthy, and delicious!
