Best Healthy Alternative Summer Cherry Crumble Recipe:

Dear Margaret,


     I'm with you.. I love the way eating "vegan" makes me feel and how it gives my digestive system a break, but I just don't think I could give up my meats, cheeses, and butter:) I have some favorite vegan products I'll share with you later when I get back from my vacation (have to see the brands when I get home:)


As you know, I'm in the Traverse City, Michigan area right now which is named the "Cherry Capital of the World".. and they aren't kidding. There are fresh fruit stands on the side of every country road and home made cherry pies on every corner.. it's amazing. I wanted to try out a healthier alternative (to all the processed stuff) with my newly purchased farm fresh cherries and here is what I found (This way, you can enjoy all the flavor from a cherry crumble pie without the gigantic sugar crash):


Ingredients:

  • 6 cups halved pitted cherries
  • 1/2 cup raw sugar
  • 1 1/4 cups old fashioned oats
  • 1/2 cup flour of choice (I like oat flour)
  • 1/4 cups sliced almonds
  • 1/2 teaspoon salt
  • 8 tablespoons (1 stick) cold unsalted butter, diced, plus more for greasing baking dish

  • Procedure:
  • Adjust oven rack to middle position and preheat oven to 350°F. Butter a 9-inch baking dish. In a medium bowl, toss together cherries and sugar until well combined. Pour into prepared baking dish.
  • In a large bowl, combine oats, flour, almonds, and salt. Use your fingers to rub butter into the mixture until it has the texture of wet sand. Spread oat mixture over top of cherries. Bake until golden, about 60 minutes. Let cool slightly and serve warm. Add a garnish of Greek yogurt, if desired.
