Light + Refreshing Summer Meal: Ground Chicken Lettuce Cups

Dear Margaret,

    It's never fun to feel full and bloated during the summer.. so here is one of my favorite easy, light, and refreshing summer recipes to stay light on your feet:) You can really just throw whatever veggies/sauces you want together, but this is how I do:

Ingredients:
-Butter lettuce or Romaine leaves for "cups"; or iceberg if you prefer, just not as much nutritional value.
-Organic ground chicken breasts (I had the butcher grind up organic chicken breasts for me b/c there was no more ground chicken)
-English cucumber, diced
-Green onions/scallions, diced
-Baby carrots, sliced
-Sliced almonds (optional)
-Cooked brown rice (or leftover rice)
-Soy sauce (optional)
-Sriracha hot sauce (optional)
-Garlic salt (optional), my favorite is "Miracle Blend" I get at Alden Mill house in Michigan!
-Newman's Own Low Fat Sesame Ginger Dressing (for dipping)
Directions:
-Season ground chicken with garlic salt and a little bit of soy sauce and cook on stove top until fully cooked through. Meanwhile, chop all the veggies and create a little "assembly line" with them so everyone can chose what they want. Place cooked chicken and a little cooked brown rice in the lettuce cups, then throw on raw toppings of choice. Drizzle with Sriracha hot sauce and serve with Newman's Own Low Fat Sesame Ginger dressing on the side for dipping. (Could also use sliced avocados). These are very good cold leftovers too!
