No Bake Refrigerated "Overnight Oats":

So random you met Sam Edelman.. and even more so that we have those exact same sandals at c.jane right now:) Super cute.

I wanted to share with you this amazing and effortless recipe I found on Pinterest recently.. it's great for a grab-and-go breakfast in the morning or even a snack later in the day. Also, there are many variations.. like "apples and cinnamon", "raspberry vanilla", "banana cocoa","blueberry coconut", etc. etc.. the options are endless once you have the base (yogurt, oats, milk).. I made the "banana and peanut butter" one and it really tastes like dessert, but healthy. Here's what you need:

  • 1/4 cup uncooked old fashioned rolled oats
  • 1/3 cup milk (I use almond milk unsweetened)
  • 1/4 cup low-fat plain or vanilla Greek yogurt
  • 1-1/2 teaspoons dried chia seeds
  • 1 tablespoon peanut butter 
  • 1 teaspoon honey, optional (or substitute any preferred sweetener)
  • 1/4 cup diced ripe banana, or enough to fill jar (approx. half of a small banana)
  • little mason jar (I just used an old jar of fancy nuts)

In a half pint (1 cup) jar, add oats, milk, yogurt, chia seeds, peanut butter and honey. Put lid on jar and shake until well combined. Remove lid, add bananas and stir until mixed throughout. Return lid to jar and refrigerate overnight or up to 2 days. Eat chilled. So good, hope you enjoy!
