Best Summer Steak Recipe

Dear Kara,

We spent the weekend in Amagansett and it was great; we were at the beach everyday. On Saturday night Michael and I threw a dinner party for 8 people. We tried a new steak recipe, Pacific Rim Flank Steak and it was amazing! The recipe is super easy, you really can't mess it up. We meant to cook the steaks to medium rare and it ended up being more like medium well and they were still awesome. This recipe would work for skirt or hanger steak as well but flank is leaner than those so it is a better choice nutrition wise.

Here's the recipe (We doubled it because we were cooking for 8)

-1 Cup prepared teriyaki marinade
-1/2 Cup chopped onion (we used white but any will do)
-1/3 Cup of honey
-1/3 Cup of fresh orange juice (we ended up using not fresh squeezed and it was still yummy)
-1 Tbsp. dark sesame oil
-1 Tbsp. soy sauce
-1 large clove garlic, crushed and peeled
-Salt and Pepper
-1 2-lb beef flank steak
-Rosemary Sprigs

Steps:
1. In a medium shallow dish combine teriyaki marinade, chopped onion, honey, orange juice, sesame oil, soy sauce, garlic and pepper to taste, blend together. Reserve 3/4 cup of marinade for basting. Put both in the fridge to further blend for three hours.

2. With a sharp knife lightly score both sides of the flank steak in criss-cross pattern. Salt and Pepper both sides of the steak. Place steak in marinade dish, turning to coat. Cover with plastic wrap and marinate in refrigerator for an hour.

3. 45 minutes prior to cooking, remove steak in marinade from the refrigerator and let sit in marinade uncovered so that it reaches room temperature.

4. Remove steak from marinade and discard marinade. Place steaks on the grill over medium heat. Grill uncovered for 15 minutes for medium rare to medium (check to be sure), basting occasionally with reserved marinade and turning over once.

5. Place remaining marinade in a small saucepan and bring to a boil. Carve the steak diagonally across the grain into thin slices. Place steak on serving dish and spoon hot marinade over the beef. Garnish the steak with rosemary sprigs.

Ingredients (excluding the steak)

Steaks in the marinade, let sit in the fridge covered for an hour
The finished product, DELISH!
